Rosé

Varietal : 100% Pinot Noir Harvesting : hand harvesting Pruning : Royat cordon pruning and Guyot cane pruning Vinification : Hand picked in the vineyard. De-stalked and put into concrete tanks. After 24 to 36 hours we pump off the juice to achieve the desireable colour. The Rosé is then vinified in the same style as a white wine, ie cold fermented with no further contact with the berries.

Maturation : The wine stays in tank for between 8 and 10 months. Malolactic fermentation also takes place in the tank. This method (ie: not going into barrels) helps preserve the wine’s fruitiness. Bottling takes place the following spring.

Cellaring : Approximately 2 to 3 years Serve : Drink at a barbeque or enjoy with a salad on a lovely sunny day. One could add grapefruit syrup and drink as an aperitif.

Taste notes : This Rose is fresh and fruity with a pleasant blackcurrant aroma. Perfect for summer days!
