Currently 20% are certified Organic. • Nicolas and his winemaker work closely with the growers on vineyard practices, harvest dates and fermentations. • Élevage done by Nicolas at the Roche de Bellene facility. • Currently purchasing finished wines, but will start buying pressed juice and fermenting the white wines in 2012. • Striving to employ the same strict environmental standards as at the Domaine, whenever possible.

Nicolas Potel’s new Burgundy estate

About Domaine de Bellene The Buildings • Originally a Cistercian abbey in Beaune, built in the 16th century. • Purchased by Nicolas Potel in 2005. • Renovated according to very strict environmental standards, based on Canada’s HQE (Haute Qualité Environnementale). • Incorporated a rainwater collection system, solar panels for electricity and a heating system fueled by vine cuttings. The Vineyards • 59 acres of vines, from Santenay in the south, to Vosne-Romanée. • Focus is on vieilles vignes (old vines – 35 years or older). • Selection massale for new plantings (no clones). • Farmed organically, incorporating some Biodynamic techniques. • Very careful and selective hand picking into small bins. The Winemaking • About 40% of the fruit is destemmed, depending on the vintage. • Vertical press for gentle pressing, which results in clear juice that does not need filtration. • Minimal cellar work: spontaneous fermentations, no enzymes, no acid adjustments, no filtration. • Gravity flow to move the wines from the fermenters to the barrels.

“What I am searching for is definition — definition of place.” — Nicolas Potel
