Breaking Out of the

When we bought our first grain mill, one with big thick stone grinding plates and a 3/4 horse motor, we honestly thought that we were making a prudent and wise choice. After all “stone mills were what Mother Nature herself would recommend”—at least that’s what the woman who sold us the mill said. However, reality and research showed us that we were actually awash in ignorance when we chose the stone mill. As soon as we got that 40 pound hummer home we excitedly loaded the hopper with wheat and turned it on. It sounded like two sick freight trains straining up a mountain side. The roar was so raucous that our baby started crying and Ann had to leave the room so her eardrums wouldn’t be flailed- ah, but still worth it, we hoped. After about six minutes I noticed a perceptible straining and slowing down of the grinder. Then I saw steam spouting out of the flour receptacle. I opened the bin and stuck my finger in the flour. Wow! Hotter than a gang pistol. Then the grinder wrenched to a halt. The stones had become so hot that the wheat had been burned to a rock-hard glaze on the stones’ surface. Those stones proved to be more furnace than mill. But not to worry, I had bought an emergency handle- maybe at a slower speed the stones would do the job? Wrong again! It took us 19 minutes to grind one cup of fine flour with the so-called emergency handle. My Stone Age ignorance started me on an education process that has lasted well over a decade, and is still going on. Here are a few of the things I’ve learned about grinding plates for grain mills: 1) Aluminum pancakes aren’t good. Mother Nature isn’t always discriminate about such things as lead and arsenic seeping through the groundwater or existing in stone itself, but what about man-made grinding stones? Surely man has improved upon nature... “What are man-made stones manufactured from?” I asked. “Aluminum oxide, plus binders,” came the answer. Aluminum has long been linked to a woeful list of ailments- dreaded Alzheimers is the latest. Ingesting aluminum in powdered form in your bread and pancakes is about as smart as eating

slug bait for breakfast. Yet I and thousands of others have done just that because of the misinformation that is rife in grain grinding lore.

2) Stone and enamel don’t mix. An internationally respected research insti-

tute dedicated to upgrading food production and resources for third world countries extensively researched the effectiveness and viability of grain mills with both stone plates and those with iron and steel. Their recommendation, without reservation, was iron or steel over stone! Why? Primarily because of the grit and particulates left behind by some grinding plates. I saw numerous pictures of skulls, both old world and new, with the teeth worn completely away. Researchers say the total destruction of the teeth was the result of eating stone ground grains. The quest for a superior grinding plate has been neither easy nor inexpensive. When I started manufacturing the Country Living Grain Mill we used a cast iron plate made from sand castings. They worked, but there was not enough control over every aspect of the grinding plate. Finally we decided to spend thousands of dollars more on an injection die that would allow us to create individual wax patterns for each set of plates. For many centuries artisans of fine and very expensive sculptings have used this Lost Wax process to reproduce their masterpieces. This state of the art investment casting method is so accurate that it would reproduce even a fingerprint if necessary. The Country Living high-carbon steel grinding plates are formed using a refined version of this ancient, timeproven process. Each plate has its own wax model which is coated with colloidal silica slurry. Then it’s put into an autoclave (an oven using both heat and pressure). This of course melts the wax, hence the term Lost Wax, leaving only the shell. Because of the heat and pressure this shell turns into an extraordinarily tough monolithic structure. Finally, 3,000 degree molten high-carbon steel is poured into the shells. Once cooled and hardened, the plates must be machined to assure complete flatness. No other grinding plates in the world go through a more exhaustive process than the plates for the Country Living Grain Mill. -Jack Jenkins

A Consumer’s Guide to Hand By Thom Leonard Mills Originally published in the East West Journal/ December 1985 Last month East West Journal reviewed electric flour mills for domestic use. Unless you use a lot of flour or are physically impaired, a hand mill may be a better choice--especially those who have a desire to be self sufficient. While hand-grinding may not be as quick as most of the electric mills, it is considerably better than a few of them. None of the hand mills heated up the flour more than a negligible few degrees, they were quiet to operate, and their use does not feed the nuclear economy. Instead of spending time and money on an exercise class, why not grind your own flour with your own power, fueled by calories from your last batch of home-baked bread? Because the rate of grinding in these manual mills is largely influenced by the person grinding, I’m not including specific times as I did with the electric mills. Rather, I’ll use relative terms about ease and speed of operation. The Country Living Mill This U.S. made, constructed from aircraft aluminum and powder-coated with an FDA approved food grade finish, is as easy as any of the hand mills to crank, and with continuous grinding will produce seven cups of fine flour

in twenty to twenty-five minutes. The flywheel has a groove for V-belt operation, powered either by electric motor or exercise bicycle (a motorization kit is offered by the manufacturer). The mill has simple lines, is decorated with a cast stalk of grain and is painted snowflake white. The model that I tested had been in use for two years, and showed no chips in the paint or other signs of wear. The Country Living Mill will grind large or small grains into flour varying from very fine to coarse grits. Overall, it’s a versatile, efficient, quality mill. Of the mills I tested it’s a choice between the Diamant and the Country Living Grain Mill. Either one will cost as much as some of the electric mills. The Diamant is about $800 more expensive than the Country Living. Both are convertible to other sources of power, but the Country Living is more compact and a little easier to crank owing to the main shaft running on sealed bearings rather than just in lubricated sleeves.

Big Berkey Water Filtration System Many of us take good drinking water for granted, and don’t realize how critical clean water is to our survival.
