Leçon n° 1 • L’appareil photo numérique

S Bridge Fuji

L’ergonomie du bridge est supérieure à celle du compact, mais sa qualité de visée souvent médiocre finit par pousser le photographe passionné à adopter son premier appareil reflex. Le choix est très large  : entre reflex grand public à partir de 400 € ou boîtier professionnel à plus de 4 000 €, il est toujours possible de trouver un appareil adapté à son budget. L’objectif s’achète séparément, permettant à chacun de s’équiper avec le matériel le plus adapté à son besoin et d’atteindre ainsi sans concession une qualité d’image optimale. Il n’est pas rare qu’un photographe possède plusieurs objectifs qui, ajoutés à la taille du boîtier, finissent par constituer un matériel relativement encombrant.

7 Hautes lumières  : le ciel présente des nuages relativement sombres et d’autres très clairs. Il est nécessaire de conserver de la matière sur toute sa surface, afin de ne pas en atténuer le modelé. Il ne faut donc pas avoir de nuages totalement blancs.

Rassurez-vous, il existe bien un moyen d’aller au-delà des limites du capteur. Il suft de saisir les deux ambiances de notre exemple précédent et de les combiner ultérieurement à l’aide d’un logiciel de post-traitement. D’une manière générale, la photographie numérique nécessite souvent d’être retraitée pour donner entière satisfaction. Les appareils compacts essaient d’intégrer dès la prise de vue un maximum d’ajustements automatiques. Ils fournissent des photographies contrastées, des couleurs saturées, des résultats flatteurs… au risque d’aller parfois trop loin, sans possibilité de revenir en arrière. Les reflex numériques délivrent habituellement des résultats plus neutres, voire décevants au premier regard. Un minimum de travail en aval de la prise de vue est alors nécessaire pour transformer cette matière brute en une belle photographie : c’est le rôle du post-traitement.

7 Basses lumières : le revers de la colline est d’autant plus dans l’ombre que la pente est forte. En particulier, si la partie droite du paysage devient trop sombre, les détails y seront noyés et la photographie sera déséquilibrée. Il faudrait donc simultanément assombrir le haut de l’image et en éclaircir le bas pour conserver des détails sur toute sa surface… C’est techniquement impossible à la prise de vue, si ce n’est en utilisant un filtre gris dégradé, dont la partie supérieure plus opaque absorbera le trop-plein de lumière du ciel. En réalité, la scène présente une plage dynamique supérieure à ce que supporte le capteur d’un appareil photo numérique, autrement dit, un écart de luminosité trop important entre les zones les plus denses (plus sombre, tout serait noir, sans le moindre détail) et les parties les plus lumineuses (plus clair, tout serait blanc, sans aucun relief). Les deux photographies qui suivent vous montrent ce que le capteur enregistrera, selon que vous fassiez le réglage pour préserver les hautes lumières, ou pour éclaircir les basses lumières.

Comprendre comment la réalité se transforme en une photographie reste un bon moyen de réussir celle-ci à votre goût. Du précédent paysage, préférerezvous garder la version la plus sombre parce qu’elle vous semble plus évocatrice d’une ambiance, ou ne conserver que la plus éthérée car elle correspond plus à votre souvenir ? Personne ne peut répondre à votre place. Vous pouvez laisser l’automatisme en décider, mais si vous lisez ce livre, c’est vraisemblablement que vous n’avez pas envie d’abandonner systématiquement votre libre arbitre à quelques composants électroniques. Vos envies doivent pouvoir s’exprimer en toute liberté, très au-delà des contraintes techniques liées à votre matériel, aussi sophistiqué soit-il.

Par ailleurs, les conditions de formation influencent la stabilité relative des facettes : à plus haute température, l’octaèdre est souvent favorisé, alors que le cube est plutôt une forme de plus basse température (attention, cette règle n’est pas généralisable). La formation des cristaux est un processus lent et qui exige une grande stabilité. Certains cristaux peuvent néanmoins se former en quelques heures, comme le sel des marais salants. Mais, dans la

Jade : un ensemble de minéraux Sous le nom de jade, on réunit des minéraux différents (des amphiboles et des pyroxénoïdes). Le jade néphrite est le plus commun. Le « jade impérial » est d’un vert intense de part la présence de kosmochlor, un pyroxène chromifère. La serpentine est quelquefois vendue (frauduleusement) comme jade. Le jade de néphrite peut être « amélioré » de manière plus ou moins sévère pour accentuer sa couleur. Le jade du Mont Viso (Italie) a été exploité dès le Néolithique et des haches polies dans cette matière ont été trouvées jusqu’en Angleterre. C’est la gemme la plus prisée en Asie.

Via une association, un accès privilégié à des collections patrimoniales peut être plus facilement envisagé, ce qui permet de tisser des liens durables avec des partenaires institutionnels (souvent très sollicités) alors que les musées restreignent actuellement leurs personnels, budgets, acquisitions et présentations muséales.

Dans les zones d’oxydation des gisements de cuivre. La localité-type de l’azurite est celle de Chessy dans le Rhône dont les échantillons attirent toutes les convoitises, ainsi que ceux de Namibie (Tsumeb) ou d’Arizona (Bisbee etc). Récemment de magnifiques cristaux ont été trouvés au Maroc, au Mexique et en Chine (parmi tant d’autres). Les gisements classiques de malachite mamelonnée, stalactiforme et rubanée sont en Oural et au Katanga. En France, hormis la célèbre mine de Chessy (localité-type de la « chessylite », voir encadré), signalons aussi de nombreux gisements dans les Vosges, en Auvergne, Var, Loire, Tarn, Savoie, Alpes-Maritimes, Corse, des Pyrénées, etc.

Les principaux critères d’identification

Ce sont les atomes de surface du cristal qui déterminent en général quelles facettes vont grandir en priorité. Ceci explique pourquoi des minéraux cristallisant dans le même système cristallin présentent des habitus différents : le sel (ou halite, cubique) présente systématiquement des cubes alors que le spinelle (également cubique) montre surtout des octaèdres.

Ensuite, il faut pratiquer différents tests qui permettent de délimiter un groupe de minéraux candidats (voir la clé d’identification p. 67). Hélas, une détermination univoque et définitive requiert souvent bien plus que cela. Pour affiner une détermination, cela reste du domaine de l’amateur très expérimenté, voire du scientifique. Ces personnes se rencontrent au sein ou via des clubs de minéralogie, qui existent partout.

La classe 1 représente les compositions les plus « simples » en termes d’atomes élémentaires plus ou moins combinés entre eux. Les classes 2 à 10 sont composées d’atomes ionisés, dont les sulfures (et associés, classe 2), halogénures (classe 3), ceux composés d’oxygène (classes 4 à 9) et de carbone organique (classe 10). D’une fleur aux quarks : vers l’infiniment petit À chaque échelle de longueur correspondent de nouveaux détails qui apportent des informations supplémentaires sur la structure de la matière. En-deçà du nanomètre, les figures sont des représentations et non pas des photos réelles. La physique de l’infiniment petit explore un large domaine qui part de l’angström (un dixième de milliardième de mètre, la taille caractéristique d’un atome) et s’arrête actuellement au niveau du milliardième de milliardième de mètre. Les échelles plus petites se dérobent encore à l’expérience et leur contenu éventuel est un mystère.

Plongeons encore plus profondément dans la matière. Les neutrons et les protons sont constitués de quarks dont on ne connaît pas la taille (au moins mille fois plus petite que celle des protons). On ignore également celle des électrons. Jusqu’à présent, les expériences semblent indiquer que les quarks et les électrons sont ponctuels et donc élémentaires... Le sont-ils vraiment, ou la résolution de nos expériences est-elle encore trop faible pour mettre en évidence leur structure ? Personne ne le sait.

Les physiciens passent leur temps à raisonner en termes d’ordre de grandeur : quelle est la vitesse typique d’une voiture ? La taille habituelle d’un grain de sable ? La distance entre deux planètes du système solaire ? En effet, pour modéliser un phénomène, il faut savoir identifier les éléments pertinents et les décrire en utilisant les outils appropriés, tout en négligeant ce qui est trop petit, trop gros, trop lent ou trop rapide. Ainsi, pour étudier la course d’une voiture sur un circuit automobile, inutile de s’intéresser à la rotation de la Terre autour du Soleil (les échelles de distance et de temps sont bien trop grandes) ou au mouvement des grains de poussière dans la boîte à gants (les mêmes échelles sont bien trop petites). Et ce n’est pas la peine de recourir à la mécanique quantique ou à la relativité générale pour déterminer si la voiture sortira de la route au prochain virage !

À chaque niveau de détails sa discipline scientifique : physique des matériaux, chimie, physique atomique, physique nucléaire, physique des particules... Toutes ces échelles de distance ont une contrepartie en termes d’énergie. Car plus on veut sonder la matière sur de courtes distances, plus il faut fournir d’énergie aux projectiles employés, et plus les accélérateurs nécessaires sont de taille importante. Voilà qui explique pourquoi les physiciens des particules, dans leur course à l’infiniment petit, se sont aussi lancés dans des expériences toujours plus grandes – jusqu’au LHC, dont les détecteurs ont la taille d’immeubles de plusieurs étages.

Pour comprendre les distances associées à l’infiniment petit, commençons par nous, les êtres humains. Notre taille typique est de l’ordre du mètre – eh oui, voilà comment les physiciens nous considèrent, que nous mesurions un mètre soixante ou deux mètres... Chacune de nos cellules est un million de fois 4

Phase I : Lors du passage dans le premier bras, le nuage protosolaire est comprimé mais ne s’effondre pas. Il se charge en atomes issus de l’intense nucléosynthèse qui règne dans le bras. Phase II : Lors du passage dans le second bras galactique, environ 100 Ma plus tard, il y a condensation du nuage protosolaire avec formation du Soleil et de son cortège planétaire.

Après la phase initiale T Tauri, le Soleil est entré dans un état stationnaire au bout de 1 à 2 Ma. Cette situation sur la série principale durera 10 Ga (soit encore 5 Ga). Après épuisement de son hydrogène, il évoluera vers les géantes rouges (l’augmentation de température provoquera la volatisation des planètes telluriques vers 12 Ga puis vers les nébuleuses planètaires avec volatilisation des planètes externes vers 13 Ga). Le Soleil s’éteindra ensuite progressivement en évoluant vers les naines blanches et noires.

L’activité solaire

Variant selon un cycle de 11 ans, elle est responsable des fluctuations haute fréquence du climat terrestre. Le nombre de centres actifs (taches solaires) se corrèle à la fluctuation du rayonnement solaire.

Le noyau (250 000 km de rayon, 15 millions de degrés) a une densité de 150. L’atmosphère solaire comprend : - la photosphère (300 km d’épaisseur, 8 000°C à 4 500 °C) qui est siège du champ magnétique et émettrice des photons ; - la chromosphère (2 500 km d’épaisseur) où la température croît avec l’altitude jusqu’au million de degrés) ; - la couronne (seule la partie interne est représentée, la partie externe peut s’étendre sur 5 millions de km) dont la très haute température (3 millions de °C) est liée à des phénomènes magnétiques, qui, produisant des courts-circuits, réchauffent le plasma.

L’énergie provient de la transformation d’hydrogène en hélium et deutérium par deux réactions : le cycle proton-proton (réaction principale dans le cas du Soleil) et le cycle proton-oxygène-azote (cyle de Bethe) où le carbone est un catalyseur. Les photons émis dans le noyau sont réabsorbés et réémis de très nombreuses fois et n’atteignent, de ce fait, la surface qu’au bout d’un million d’années.

The term “skin ego” designates a mental representation that the child forms on the basis of its experience of the surface of its body and uses to picture itself as the vessel of mental contents. The skin ego belongs to the period in development when the psychic ego differentiates from the body ego on the practical level while remaining indistinguishable from it in the imagination. « Mmh, bof, pouah ! » Telle pourrait être la trilogie de base de beaucoup de dégustateurs de vin, et de toutes autres boissons et aliments perçus par nos sens. On aime ou on n’aime pas : tel M. Jourdain, on fait de la dégustation hédonique sans le savoir. On exprime le plaisir ou le déplaisir ressenti. Ce comportement simple et spontané peut être précisé par l’analyse chimique et l’analyse sensorielle. Plus simplement, on apprécie mieux et on prend davantage de plaisir en dégustant. Mais de quoi s’agit-il ? Dérivé du latin degustatio, issu de degustare, action de goûter, le terme « dégustation » n’apparaît q u’en 1519 et reste rare jusqu’à la fin du X V I I I e siècle. Il fait référence à l’action de goûter avec attention pour discerner les caractères d’une boisson ou d’un aliment, pour apprécier, vérifier, se délecter, et éprouver du plaisir. Déguster a de nombreux synonymes : taster (to taste en anglais), essayer (probar en espagnol), savourer, se régaler… ou, un peu différemment, vérifier, analyser. Notons au passage que si le mot est récent, la pratique est fort ancienne. Les Sumériens de Gilgamesh, il y a près de 5 000 ans, différenciaient clairement les bières populaires de la Mésopotamie et les vins de l’élite issus des monts Zagros (à l’ouest de l’Iran) ou du Liban. Plus près de nous, il y a « seulement » 2 400 ans, Platon distinguait les principales saveurs et les « espèces d’odeur ». À ce titre, une autre de ses définitions pourrait être celle-ci : « L’espace de temps plus ou moins long entre le moment où on prend le verre dans la main et celui où, le vin avalé, son goût s’estompe dans la bouche ». La durée en est variable au gré du buveur et, à son insu, on peut mesurer son degré d’intérêt pour le vin, de raffinement, de civilisation même, à la longueur de cette période et au volume de la gorgée. Montre-moi comment tu bois, je te dirai qui tu es. Terrible aveu pour certains. La dégustation transforme une simple consommation – un acte instinctif – en un acte volontaire et réfléchi, en suivant une méthode et en ordonnant ses impressions. Avec un peu de pédanterie, on peut dire qu’il y a transformation

Le vin, pour être apprécié, exige attention, recueillement même. Savoir analyser décuple le plaisir. Que de sensations perdues par ignorance, inattention et maladresse ! Bien d’autres définitions ont été données. Il en est de plus littéraires. Au hasard des lectures, nous avons retenu celle-ci qui agrandit le champ des fonctions gustatives : « La dégustation réalise la plus étroite coïncidence entre l’homme et son milieu, entre l’homme et les choses – les choses de sa vie. Elle constitue un rapport écologique privilégié. » Ou encore : « La dégustation, c’est l’intimité du vin. » La dégustation est un art de mesure, de bon sens. Le bourguignon Pierre Poupon élargit la définition de la dégustation à la dimension d’une discipline. Il y a une grande différence entre boire et déguster. Les bons vins, les grands vins ne sont pas de ces boissons que seulement on avale ; ils se savourent. On ne les boit pas comme on a l’habitude de le faire d’une boisson désaltérante, à grands traits, à la recherche de cette seule sensation tactile du liquide qui rafraîchit agréablement la gorge. pagne la consommation d’une boisson alcoolique qui retient le buveur de vin. Le geste de boire le vin et sa signification ne sont pas, en effet, ceux du buveur instinctif. La technique de boire est différente, elle s’apprend. Le plaisir ne se situe pas au même niveau. En outre, à l’opposé des saveurs monotones que l’on retrouve dans les boissons de soif fabriquées, le vin présente, à qui veut bien l’interpréter, une gamme infinie d’arômes et de goûts naturels. Il est varié et multiple. Il n’est jamais tout à fait le même aussi, parce que le moment change, parce que la bouchée de mets qui le précède est différente, peut-être aussi l’humeur de celui qui le boit. Œuvre de beaucoup de labeur, de science et de patience, le bon vin, le grand vin, mérite de l’application de la part de celui qui veut le connaître, afin que passe jusqu’à lui le message de ceux qui l’ont élaboré en pensant au plaisir des autres hommes. La dégustation sert à déchiffrer ce message, à en décoder les sensations gustatives. Pour boire, le plaisir physique est suffisant. Pour déguster, il faut en plus de l’intelligence et des compétences. On retrouve la multiplication du plaisir sans avoir besoin de multiplier la consommation, bien au contraire. « Mieux connaître pour mieux apprécier », telle est la devise de l’amateur, celui qui aime mais aussi celui qui est partisan, qui a une préférence, qui réunit goût et discernement, nous disent les dictionnaires. On pourrait adopter ici le mot espagnol afición, d iffici lement traduisi ble, q ui évoq ue un mélange d’amour, de ferveur et de connaissance.

Les Grecs nous ont transmis l’art de cultiver la vigne et particulièrement la taille, lorsqu’ils débarquent en Provence, six siècles avant J.-C. Les Romains ne prennent la relève qu’au Ier siècle av. J.-C.

2 Les cépages La vigne est une liane. Elle appartient au genre Vitis, dont une seule espèce produit des vins de qualité : l’espèce européenne Vitis vinifera. Les nombreuses variétés qui la composent s’appellent des « cépages ». On en a dénombré plus de cinq mille, mais peu d’entre eux sont réellement cultivés. En France, il en existe plus de deux cents mais une quinzaine seulement couvre 80  % des surfaces. On les retrouve d’ailleurs dans le monde entier, principalement dans des zones climatiques tempérées, qui sont les mieux adaptées à la production de qualité.

Le cépage est un point de repère facile à assimiler, par ses arômes caractéristiques, mais aussi sa structure en bouche et même sa couleur. Cependant, il ne faut pas oublier que le cépage n’intervient jamais seul. Le terroir et le climat marquent autant le caractère du vin. C’est pourquoi, en France, chaque région a ses cépages de prédilection, cépages traditionnels qui ont fait leurs preuves au cours du temps.

En l’an de grâce 1664 (car, à cette époque reculée, l’an était toujours « de grâce »), le jeune Strasbourgeois Jérôme Hatt est reçu comme tonnelier brasseur et s’installe dans une taverne brasserie à l’enseigne du Canon, située place du Canon. Près de trois siècles plus tard, la petite brasserie (où la famille Hatt a toujours conservé le pouvoir, puis un poste au conseil d’administration jusqu’en 1977 en la personne de… Jérôme Hatt) est devenue le numéro un de la bière en France, avec sa marque Kronenbourg. Ce nom vient du faubourg de Strasbourg où elle s’est installée à la fin du xixe siècle, mais avec un K à la place du C, pour faire plus germanique, peut-être…

Dans les années 1950, les cafetiers connaissent de gros problèmes à cause du blocage des prix de leurs principaux produits, parmi lesquels la bière standard (curieusement appelée Luxe dans la nomenclature officielle). Ne cherchant qu’à les aider, les brasseurs français créent ex-nihilo une nouvelle catégorie, la bière Spéciale, qui échappe à la taxation. C’est bien sûr une blonde (les Français n’aiment que ça, paraît-il…), juste un peu plus forte en alcool et plus ronde en bouche. Pour Kronenbourg, ce sera la 1664, en référence à la date de fondation de la brasserie.

176 mètres pour le mont Cassel, 159 pour celui des Récollets et 158 pour celui des Cats : des altitudes qui n’ont rien de vertigineux, mais qui font tout de même leur petit effet dans la plaine des Flandres, établie entre 30 et 50 mètres au-dessus du niveau de la mer. Situés à proximité de la frontière belge, ces trois monts étaient tout indiqués pour donner leur nom à une nouvelle bière forte lancée 17  novembre 1984 par la brasserie Ricour, dont les origines remontent au moins à 1789. Depuis, elle a changé plusieurs fois de mains avant de devenir la propriété de Rémy Ricour en 1920. Ce dernier ne connaissait rien à la bière, mais son oncle va lui transmettre l’essentiel de son savoir-faire.

Votre avis

Dans cette région de tradition agricole, l’orge comme le houblon poussent sans problème et donnent aux bières un caractère céréalier naturel… qui ne doit rien au marketing. Seul problème : le manque d’eau. Rémy Ricour réalise donc un forage à 120 mètres de profondeur, mais qui ne donne qu’un faible débit d’une eau trop alcaline, juste bonne pour le nettoyage des installations.

Avec le nouveau millénaire, la « 16 » se décline : d’abord en brune, qui n’a pas duré, puis en « Blanc », subtile distinction des spécialistes du marketing par rapport à la « bière blanche ». Ainsi virilisée (ce qui ne l’empêche pas de plaire beaucoup aux femmes), elle titre 5 % d’alc. vol. tout juste. Enfin en 2011 est créée une 1664 ambrée, baptisée Millésime car elle varie, légèrement, faut pas exagérer tout de même, d’une année sur l’autre. à quand une 1664 aux fruits rouges, la tendance du moment ? Mousse Couleur Nez Bouche

Rémy Ricour brassait des bières peu alcoolisées, livrées en fûts aux particuliers comme aux cafetiers, mais dans un rayon ne dépassant pas 10 km autour du village. Aujourd’hui, on peut trouver la 3 Monts (8,5 % d’alc. vol.) aussi bien en Suède qu’en Nouvelle-Zélande, aux États-Unis comme au Brésil ou en Corée. Mais je ne sais pas comment on dit 3 Monts en coréen… L’originalité de cette bière est l’étrier métallique qui retient le bouchon de liège fermant la bouteille. Un système à peu près unique au monde... et qui énerve parfois lorsqu’il s’agit d’ouvrir le flacon !

Blanche, crémeuse, compacte et persistante. Jaune pâle, trouble. Frais, avec une dominante d’agrumes (citron jaune). Belle fraîcheur dès l’attaque. On retrouve les notes citronnées du nez, et un peu de coriandre. Bien qu’inspirée du style belge, elle s’en distingue par un caractère plus sec, bien désaltérant, et une signature aromatique bien à elle. Et inutile d’y rajouter une rondelle de citron !

à Rémy Ricour a succédé son fils Pierre, puis ses petits-enfants François et Serge, qui poursuivent une politique sage et sans tapage de progression régulière des ventes et de la production : 40 000 hl à l’heure actuelle, dont 15 % à l’export. Preuve que l’on peut prendre de l’altitude dans le plat pays des Flandres…

Grâce au développement international du groupe (d’abord avec Danone, puis avec l’Écossais Scottish & Newcastle), 1664 devient la référence qualitative de Kronenbourg. Il s’en est même vendu davantage au Royaume-Uni qu’en France.

Blanche, crémeuse, de longue persistance. Blond doré, limpide. Les céréales maltées dominent, avec de belles nuances fruitées. Généreuse dès l’attaque, ample, aux notes de céréales dominantes relevées par une agréable amertume perceptible surtout en fin de bouche. Une bière à servir à table, ou alors à l’apéritif ou en digestif. Attention toutefois à sa force en alcool, guère sensible au palais. 13

Romain Rolland vient d’écrire Jean-Christophe, et il va recevoir le prix Nobel de littérature quand il conçoit Colas Breugnon en 1913. What makes white wine white (really pale yellow) is the absence of maceration. The harvest is immediately crushed and pressed to avoid lengthy contact between the raisins’ must and skins.
