KÖRÖZÖTT Is there any Hungarian, who doesn’t like körözött? Probably there is, but for the majority the körözött still remains one of the most adored meal. Its preparation is really simple and it can be consumed immediately. Also, it isn’t just tasty but healthy at the same time! The traditional körözött is usually made from sheep- or cow cottage cheese, but any kind of cottage cheese will do. The following receipt is for the traditional körözött, for other variations will give some tips. Ingredients: · 20 dkg cottage cheese · 5 dkg butter · 1 teaspoon red paprica · 1 teaspoon cumin · 1 onion · Salt, pepper Preparation Let’s slice the onion into very little pieces. Let’s mix the butter until it’s foamy with a mini egg-beater, then let’s mix it with the cottage cheese. Let’s put the spices in it and then let’s mix it again. We can enjoy it immediately but it would be adviseble to put it into the fridge for a couple of hours. Tips · The cumin can be added crushed or in whole pieces – depending on preference · The onion can be any kind – many people like it shredded · The original receipt says 10 dkg butter, but the half of it is perfectly fine, or you can leave it out altogether which is an even more healthier version · If the consistence of the körözött is too concentrated – we can add 1 or 2 spoons of joghurt or tejföl. The more liquid körözött can be also used for dipping at parties or other events. · We can make the taste more exiting by adding some hot-paprica cream – or with some dijoni mustard and a few pieces of sliced caper · The körözött is a typical Hungarian sandwich cream, but it can be served also with pogacsas or with vegtable-muffins! Of course we can use it for sandwiches as a basic cream.
