SOUS LE TUTU Taut, gnarled and sinuous, the dancers’ bodies revealed in London-based Rick Guest’s powerful behind-the-scenes photos betray the raw physicality (and undoubted pain) of a life en pointe. It’s a side of the profession that’s often hidden beneath the aesthetic perfections of costume and movement (Black Swan, anyone?). The series – entitled What Lies Beneath – is part of a new artistic collaboration between Eurostar and London’s Hospital Club. While travellers will be able to enjoy Guest’s photographs in Eurostar’s Paris Business Lounge, video installation works by James Alec Hardy will be on show in Brussels, and acrylic paintings by Wiktoria Deero in London. rg-e.com

Tendus, tordus et sinueux, les corps des danseurs révélés dans les photos prises en coulisse par le photographe londonien Rick Guest trahissent l’immense exigence physique (et la souffrance) de la vie en pointes. Cet aspect du métier est souvent invisible derrière la perfection des costumes et du mouvement (rappelez-vous Black Swan). VINCENT LINDON Sixth time lucky MARIE-NOËLLE BAUER

At 56, Lindon is an actor at the peak of his powers. He recently ‘pulled a Leo’, finally winning Best Actor at the Césars – France’s Oscars – after previously being nominated five times. This for his dignified portrayal of an unemployed everyman in The Measure of a Man. ‘I was slightly annoyed I finally won; it was fun joking around with friends about being the eternal loser,’ he quips, when we meet in London.

What did you mean when you said that you embraced acting to fill a void? I’m beset by the same sense of emptiness as everyone else: boredom; psychological scars stemming from childhood; an Oedipus complex. We’ve all had mums and dads who have left their mark on us in a positive or negative way… Cinema’s been a tool for me to overcome my anxieties as best I can. Yet it doesn’t solve everything. Unlike Thierry, your character in The Measure of a Man, you seem rife with emotion. What was the last thing that truly delighted you? It’s a detail really, but this morning in the train I was gagging for a coffee and all the on-board cafés were shut because we were just 20 minutes outside London. So this train manager kindly sprinted across 10 carriages while we were travelling at 250mph to fetch me a mug of coffee. When I asked him how much I owed him for it, he said: ‘Nothing – it’s my pleasure!’ I thought that was super sweet. You’re considered quite the activist/actor. Have you become more or less riled by the state of things with age? Definitely more, unfortunately. Hey, what magazine is this for again?

Not bad. So your beard, that’s for Rodin too? Yes. And it really doesn’t make me happy at all. Everybody has a beard nowadays, and I just can’t stand it. I want to go around with a little sign around my neck saying: ‘It’s just for a role. I’m not one of you hairy hipsters.’ The alternative is sticking on a fake beard, but when I do a role, I really like to go the whole hog. And of course it’s itchy, too. So you’re suffering for your art? I certainly am. And I have another three months to go. But man, it’s going to feel so good to shave this baby off. The Measure of a Man will be released on 3 June in the UK, with screenings at London’s Ciné Lumière, institut-francais.org.uk

Umm… The Eurostar’s... [Looks genuinely dumbstruck] That’s incredible! And here I was telling you that anecdote about the train earlier! I never lie and I promise you, hand on heart, I had no clue! But strange things like that happen to me all the time. [Pauses] Now I need to change my answer to that previous question – otherwise your readers are going to think we’re taking the piss. Instead, I can talk about this sculpture I’ve been working on for the Auguste Rodin biopic I’m currently filming [he finds a photo of a clay foot on his phone]. I enjoyed seeing it take form. Looks good, right?

À 56 ans, Vincent Lindon est au sommet de sa carrière d’acteur. Comme Leonardo DiCaprio, après cinq nominations, il a enfin reçu le César du meilleur acteur pour son portrait tout en dignité d’un monsieur Tout-le-monde au chômage dans La Loi du marché. « J’étais un peu énervé d’avoir enfin gagné : c’était marrant de jouer à l’éternel loser devant les copains », dit-il lors de notre rencontre à Londres.

Vous avez dit que la vie artistique vous aidait à combler un vide. Dans quel sens ? J’éprouve le même sentiment de vide que nous tous, 12 000 trucs : l’ennui, la psychologie de l’enfance, l’Œdipe. On a tous eu des papas et des mamans qui nous ont marqués en bien et en mal... On a tous eu des complexes et des névroses. On s’en sort chacun comme on peut. Et moi j’ai trouvé que le cinéma, c’est un outil pour pallier au mieux les angoisses que j’ai. Mais ça ne règle pas tout. Contrairement à Thierry, votre personnage dans La Loi du marché, vous semblez habité par l’émotion. Quelle est la dernière chose qui vous a vraiment ravi ? C’est un détail mais ce matin dans le train, j’aurais tué pour un café et tous les wagons-restaurants étaient fermés parce qu’on arrivait bientôt à Londres. Le chef de bord, super gentil, a fait 10 bagnoles avec le train qui faisait 250 à l’heure et il m’a ramené un café dans un mug. Quand j’ai dit « Je vous dois combien ? », il m’a répondu « Rien du tout, ça me fait plaisir ». J’ai trouvé ça très mignon parce qu’il avait certainement autre chose à faire. Vous êtes considéré comme un acteur très engagé. Vous devenez plus ou moins révolté avec l’âge ? Plus, malheureusement. C’est pour quel magazine, encore ? Euh... celui de l’Eurostar. [Air authentiquement stupéfait] Avec ce que je viens de dire, c’est hallucinant. Alors moi, je ne mens jamais et, parole d’honneur, je ne savais pas. Mais moi, il m’arrive tout plein de trucs comme ça. C’est fou. [Pause] Il faut que je change ma réponse à la question précédente, sinon vos lecteurs vont croire qu’on se fout d’eux. À la place, je peux parler de cette sculpture sur laquelle je travaille pour la biographie de Rodin que je tourne en ce moment [il montre la photo d’un pied en argile sur son téléphone]. J’ai bien aimé la voir prendre forme. Pas mal, hein ? Oui, pas mal. Alors la barbe, c’est pour Rodin aussi ? Ben oui et c’est pas marrant. Tous les hommes ont la barbe en ce moment. Je ne supporte pas ça. J’ai envie de me trimballer avec un écriteau qui dit : « c’est pour un rôle, autrement, j’ai pas du tout envie de vous ressembler ». Mais je suis obligé, sinon, je m’en accroche une fausse — mais moi quand je fais un rôle, je le fais vraiment. Et en plus ça gratte. Alors, vous souffrez pour votre art ? Oui, j’en ai encore pour trois mois, mais ça va être tellement beau de l’enlever. La Loi du marché est sorti en DVD

THE BEST PART OF THE EVENING ? Probably downing our cocktails. They must have been pretty strong because I have no idea what they were called or concocted from. I do remember having a pretty great chat as we swigged our drinks; comparing where we’d travelled and our musical tastes. / Le moment mémorable ? Sans doute les cocktails. It’s a sunny Friday morning, and Henry Holland’s sipping coffee from a Mr Men mug (Mr Quiff y, for obvious reasons). His own cartoonish quiff is standing tall, but his outfit’s more sober than expected: Paul Smith trousers, a navy jumper, and two Hermès ‘H’ bracelets. ‘I dress for my mood,’ he shrugs. ‘Sometimes I want to dress like a clown, sometimes I’m more sombre. It also depends on my appointments; I really enjoy going to serious bank meetings in my denim cutoffs, then REALLY knowing all my shit and giving them what for.’ Holland has something of a knack for subverting peoples’ expectations. He never studied fashion, instead starting out as a journalist – a teen mag hack, to be precise, with a column called ‘Blinging or Minging’. On the side – ‘just for a bit of fun’ – he knocked up some slogan T-shirts, riffi ng on rising industry stars and oozing innuendo (‘Cause me pain Hedi Slimane’; ‘Do me daily Christopher Bailey’). Word spread after Gareth Pugh took his Fashion Week bow in ‘Get yer freak on, Giles Deacon’. When Deacon, in turn, trod the cat-

‘SOMETIMES I WANT TO DRESS LIKE A CLOWN, SOMETIMES I’M MORE SOMBRE’ walk in ‘UHU Gareth Pugh’, the in-crowd wanted in on the joke; sales soared, and the international buyers came knocking. ‘In hindsight it was PR genius, but it really wasn’t planned; if we’d tried to orchestrate something like that, people would’ve seen straight through it.’ His fi rst collection followed, proving something of a learning curve. ‘I only realised it was meant to be Autumn/Winter when I saw Louise Goldin’s girls in balaclavas and head-to-toe knitwear. My models were in T-shirts that just about covered their bums.’ He pauses, not missing a trick: ‘Very ahead of its time, mind, now that seasonality’s gone out the window.’ Fashion’s upper echelons didn’t know what to make of Holland: loud, Northern, up for a laugh and topped off by the now-famous ’do. (‘I can’t leave the house without my hair,’ he says, scandalised at the very notion. ‘If I have a bath before I go to bed, I’ll totally redo my hair.’) Then there was his party reputation, and coterie of It-girl friends: Alexa, Daisy and Pixie, who whooped it up on his front row. He sighs. ‘I was out all night a lot of the

Si on avait essayé d’orchestrer un coup comme ça, ça se serait vu tout de suite. » Sa première collection suit, avec quelques découvertes. « Je n’ai réalisé qu’on était censé faire de l’automne-hiver qu’en voyant les fi lles en cagoules et laine de la tête aux pieds chez Louise Goldin. Mes mannequins étaient en t-shirt ras des fesses. » Il enchaîne : « En fait, c’était très en avance sur son temps, maintenant que le saisonnier est out. » Les sommités de la mode ne savaient pas quoi penser de cet Anglais du nord bruyant, rigolard et coiffé d’une désormais célèbre banane. time, but I’d still get up and come to work.’ He jokes that what he should have done was team up with a clean-living spreadsheet genius: ‘They do your balance sheets while you go out and get wasted!’ He drops to a husky sotto voce: ‘Do you get a hard-on over Excel? Can you do formulas with your eyes closed? Apply within!’ Holland, though, has always been a chap who likes a challenge, and – sometimes on two hours’ kip a night – set out to prove the doubters wrong. Season by season he worked hard to learn the ropes, and secured some astute licensing deals, from stick-on nails and outré tights to spin-off clothing ranges. ‘You fi nd out really early on that no matter how creative you are, you can’t do anything without money. Finding the money to deliver the ideas becomes part of the creative process.’ Ten years later here we are, in the new HoH headquarters: an airy, three-storey office just off London Fields. ‘It feels like we’ve reached a real milestone,’ he says. ‘It’s time to kick things up a gear.’ Th is month sees the launch of a new interiors collaboration with Habitat, playing on bug and botanical prints from the Spring/Summer collection. So what’s it like at casa Holland, just round the corner from the studio? ‘The fi xtures, fittings and wall colours are quite pared back, which is basically my way of getting past my boyfriend. I let him paint the walls in white and Elephant’s Breath, then COVER them with stuff.’

Il est temps de mettre un coup de pied dans la fourmilière. » Ce mois-ci voit la sortie d’une nouvelle collaboration déco avec Habitat qui joue sur les imprimés insectes et botanique de la collection printemps-été. Alors, à quoi ressemble le Holland home, tout près du studio ? « Les murs, les portes, etc. sont assez sobres, c’est essentiellement ma façon de contourner les goûts de mon copain. Je l’ai laissé faire des murs blanc et taupe, que j’ai ensuite COUVERTS de trucs. » Ce qui l’excite, dit-il, c’est d’étendre la portée de sa marque. « J’aime mettre notre patte sur toutes sortes de produit et j’aime ce feeling de construire une griffe, avec un canapé puis un tapis... » Un univers estampillé House of Holland comme but ultime ? « Tout à fait, opine-t-il. Je monterais dans ma Rolls, encore en robe de chambre House of Holland, j’irais à la tour House of Holland puis je déjeunerais dans des assiettes House of Holland. » Et ensuite des vacances d’été dans une caravane House of Holland ? Art-themed hotels can often feel glib; not so this thoughtfully conceived B&B, offering six rooms designed by six temporary artists-inresidence. All have an industrial vibe – built in 1840, the building sits in what was once the sketchy working-class district of the Coin du Diable – and conceptual flourishes, including a four-person concrete bed. HS63’s strippedback room features a high-end Nakamichi tape player, and a cassette library archiving the gigs performed in the B&B’s former stables. Continuing the artsy theme, breakfast is served by two musos given free bed and board for playing host.

In the mood for something seriously old school? Well you can’t go wrong with this fivestar stay. Even its newly opened Great Central Suite is a plush picture of traditional luxury – all old-fashioned telephones, fancy drink trolley with decanters, and an enormous, marble-tastic main bathroom. Yet the real showstopper here is undoubtedly the Winter Garden: a glass-roofed atrium graced by more palm trees than a House of Hackney print, where you can dine on retro British fare while indulging in the fantasy that you’re lost in the tropics, rather than a brief jog away from Madame Tussauds.

The trend for chic hostels (chostels, anyone?) continues unabated, and this one in Belleville comes with a key distinguishing factor – a cheeky sense of humour, evident in the signs posted throughout encouraging you, for example, to ‘make like a superhero and take the stairs rather than the lift’. We stayed in one of the lush double rooms, which have exclusive night-time access to a rooftop terrace with wowser views of the city. Even if you’re sharing a dorm with seven others (at €25 per night), this place is still a blast, thanks to a brilliant lobby bar with DJ, photobooth and pinball machine.

Si les hôtels à thème artistique frôlent souvent la prétention, ce n’est pas le cas de ce B&B bien conçu, avec six chambres décorées par six artistes. Le style est industriel – l’édifice, bâti en 1840, était jadis dans le quartier ouvrier de Coin du Diable – et parsemé de fantaisies, dont un lit quatre places en béton. La chambre brute HS63 est dotée d’un lecteur de cassettes Nakamichi et des cassettes proposant les concerts de HS63 dans les anciennes écuries. Dans la même veine, le petit déj est servi par deux musicos qui bénéficient du gîte et du couvert en échange de leurs services.

Envie de vrai classique à l’ancienne ? Difficile de se tromper avec ce cinq étoiles non loin du zoo de Londres et de Madame Tussauds. Même sa suite Great Central, nouvellement ouverte, est un somptueux modèle de luxe traditionnel, tout en téléphones d’antan, chariot à alcools haut de gamme et énorme salle de bain principale au marbre rutilant. Pourtant, rien n’égale la vraie star du lieu : le jardin d’hiver, décoré de palmiers géants, où l’on se régale sous la verrière de plats british rétro en se croyant aux Indes, plutôt qu’à deux pas de la station de métro Marylebone.

La tendance aux auberges de jeunesse de qualité ne se dément pas. Celle-ci, située à Belleville la cosmopolite, se distingue par un humour, visible dans les panneaux qui vous invitent, par exemple, à « faire comme un super-héros en montant par les escaliers plutôt que l’ascenseur ». Nous avons pris une des belles chambres doubles, qui ont un accès nocturne réservé à la terrasse sur les toits, avec vue imprenable sur la ville. Mais même si vous partagez une chambre pour huit (25 € la nuit), le lieu est génial grâce au bar du rez-dechaussée, avec DJ, photomaton et flipper.

Are you ready for this jelly? Back in 2005, Peter Gordon wrote a pioneering volume championing the humble salad. It’s 10am: breakfast time at E.Pellicci, in Bethnal Green. Inside, the tiny, canaryyellow café is boisterous with conversation and the clatter of people tucking into a good fry-up. Th is perfectly-preserved, old-school East End caff has been a meeting place for locals since it was opened by Elide and Priamo Pellicci back in 1900, and it’s now run by their grandchildren, Nevio and Anna. Their mum, Maria, is still in the kitchen, visible through the service hatch, cooking up her Italian-inflected café fare at the grand old age of 75.

‘Th is area has changed so much in the past 20 years,’ Anna tells me, slipping into Italian to yell my food order to Maria: a bolstering, plate-fi lling fry-up (£6. ‘We get all sorts coming in here, though, from Shoreditch trendies to Jukebox Jimmy.’ Jukebox Jimmy is indeed sitting in the corner, as he has been almost every day for the past 50 years, with a bowlful of homemade lasagna – easily enough for two and utterly irresistible, even for breakfast. ‘It’s the best caff in London,’ he says, ‘because people actually communicate.’

TRY An English breakfast (£6) / Petit déjeuner anglais

/ Il est 10 heures, l’heure du petit déjeuner à E.Pellicci à Bethnal Green. Le minuscule établissement jaune canari résonne du brouhaha des conversations et des bruits de couverts des clients attablés. Ce café à l’ancienne de l’East End, parfaitement conservé, est le rendez-vous du quartier depuis son ouverture par Elide et Priamo Pellicci en 1900. Aujourd’hui, leurs petits-enfants Nevio et Anna sont aux fourneaux. On aperçoit par le passeplat leur mère, Maria, qui, à l’âge vénérable de 75 ans, continue à préparer les plats au parfum d’Italie. « Le quartier a tellement changé ces 20 dernières années », me dit Anna, qui passe à l’italien pour crier à sa mère ma commande : une roborative assiette de petit déjeuner anglais ( 6 £). « On rencontre toutes sortes de gens, des hipsters de Shoreditch à Jukebox Jimmy. » En effet, comme presque tous les jours depuis 50 ans, ce dernier est attablé dans un coin, devant une assiette de lasagnes maison, énorme et irrésistible, même le matin. « C’est le meilleur troquet de Londres parce que les gens se parlent vraiment », dit-il.

Our next port of call is Violet Cakes, some 20 minutes’ stroll away. It’s the perfect place for elevenses: a tiny jewel-box of a bakery run by Californian Claire Ptak (food geeks, take note: she trained as as a pastry chef at Alice Waters’ iconic Chez Panisse). The counter’s arrayed with sugar-dusted cinnamon buns and upside-down almond polenta cake. My favourite, though, is her famous lemon drizzle, paired with a restorative pot of tea (£6 for both). / Escale suivante, Violet Cakes, à quelque 20 minutes de là. Cette pâtisserie aux airs de boîte à bijoux, parfaite pour le petit creux de 11 heures, est tenue par la Californienne Claire Ptak (avis aux aficionados : elle a été chef pâtissier au célèbre Chez Panisse d’Alice Waters). For lunch, a Shoreditch classic I’ve been coming to for a decade, Sông Quê on Kingsland Road. Crowded and convivial, it’s the pick of the bunch in a stretch lined with Vietnamese eateries and hipster bars. It still serves the chilliand garlic-laced soft-shell crab tempura that I fi rst fell in love with, and the beef pho is arguably London’s fi nest. Rich and perfectly balanced, a lunchtime bowlful will set you back a mere £7. Settling the bill, I always pocket one or two of the ginger caramels they give away at the service counter, by way of a free dessert.

TRY Homemade charcuterie (£11) / Assiette de charcuterie maiison

While Sông Quê has hardly changed, in the past few years Shoreditch’s food scene has morphed beyond recognition. There’s been an influx of ambitious young chefs, trained in world-class kitchens and keen to open their own restaurants in more affordable surrounds. Just round the corner from Sông Quê is Michelin-starred Clove Club, set in the old town hall and opened three years ago by Scottish chef Isaac McHale (an ex-Ledbury chef who gained a cult following with his anarchic pop-up dining). Clove Club is famed for its tasting menus, but true to its roots has a friendly bar with decidedly superior bar snacks. The pine salt-spiked buttermilk fried chicken is a must (£7.50 ) as is the homemade charcuterie (while it’s slightly over budget at £11, it’s big enough for two to share). ‘You’ve come on a good day,’ smiles sous chef Tim Spedding, delivering our plate. ‘We’ve just cut into a new cure, and it’s one of the best we’ve ever done.’ The wafer-thin Ventrèche is made from Mangalitza pig belly, a breed prized for its sweet, luscious fat. Cured in red wine and salt, smoked and matured for four months, it’s headily delicious.

TRY Chilli and garlic soft-shell crab tempura (£7) / Tempura de crabe au piment et à l’ail

/ Pour déjeuner, une institution de Shoreditch que je fréquente depuis dix ans : Sông Quê sur Kingsland Road. Convivial et bondé, c’est le meilleur d’une enfi lade de restos vietnamiens et de bars branchés. Il sert toujours le tempura de crabe au piment et à l’ail qui m’a conquise. Son pho de bœuf est le meilleur de Londres ; il ne vous en coûtera que 7 £ pour un bol savoureux et parfaitement équilibré au déjeuner. Au moment de payer, à la caisse, je prends toujours en guise de dessert un ou deux caramels au gingembre offerts par la maison.

/ Si Sông Quê n’a presque pas changé, la gastronomie de Shoreditch est méconnaissable depuis quelques années. Le quartier a vu arriver de jeunes chefs ambitieux, formés dans des cuisines de classe mondiale, en quête d’un quartier abordable pour ouvrir leur propre table. Non loin se trouve le Clove Club, dans l’ancienne mairie, ouvert il y a trois ans par le chef écossais Isaac McHale (ancien du Ledbury, qui s’est gagné des groupies avec ses dîners pop-up anarchiques). Étoilé au Michelin, le Clove Club est célèbre pour son menu dégustation mais reste fidèle à ses racines avec un bar chaleureux qui sert des grignotages de qualité. Le poulet frit au babeurre et sel de pin ( 7,50 £) est un must, comme l’assiette de charcuterie maison, un peu hors budget à 11 £, mais il y en a pour deux. « Vous arrivez au bon moment, sourit le sous-chef Tim Spedding en nous servant. C’est une nouvelle salaison — notre meilleure ! » Coupée très fi ne, la ventrèche est faite avec de la poitrine de porc mangalitza, réputé pour sa belle graisse onctueuse. Macéré au vin rouge et au sel, fumé et maturé pendant quatre mois, c’est un délice entêtant.

After all that food, it’s time for a 5 drink – and perhaps the tiniest of snacks. We head to The Marksman on Hackney Road, a stately old Victorian boozer. Recently taken over by chefs Tom Harris and Jon Rotheram – both veterans of the legendary St John – it does some of the best bar food you could ever hope to eat. We settle into one of the back tables and order the must-try dish: beef and barley buns (£5 ), served with a blast of fresh horseradish and dollop of horseradish cream. ‘It’s pub food, but that little bit different,’ says Tom, joining us at the table. ‘And we’re also now doing breakfast buns, with bacon we smoke up on the roof.’ We leave the pub full, merry, and swearing to come back for breakfast. And that’s the kicker about the East London food scene – there’s always something tasty around the corner.

Sounds gimmicky? Sure, the space is decked out in brightly-hued tins of the small oily fish, yet this convivial joint – with killer views of Notre-Dame de la Garde – proves a tasty option, whether you’re after nibbles for your apéritif (Provençal wines; local craft beers) or a proper slap-up meal. Be warned: the fritters made from really fine, fresh Mediterranean pilchards are so

alarmingly addictive you’ll be tempted to give the rest a miss. A rookie mistake: the selection of sardines served in their tins (with pickled onions, butter and fresh vegetables, as well as hunks of crusty bread), and a dish of mi-cuit mackerel were frankly stunning. And for those with a truly one-track mind, there are chocolate sardines for afters. / Après un séjour à Paris, un Marseillais entreprenant est rentré au pays pour ouvrir, selon ses dires, le premier bar à sardines au monde, au cœur de la zone touristique du vieux port. This time of year I start to long for Marseille. In the past I’ve given in to that yearning and left Britain for a sunny weekend in the South of France, with its seductive scents of sea and pine, fennel and lavender. On my last visit, I relished dinner at Le Petit Nice, my friend Gérald Passédat’s restaurant, located near the old port of Marseille and seriously good. This May, however, I’ll most likely be kept grounded – very happily – in London by the RHS Chelsea Flower Show. Over the years I’ve been both a curious visitor entranced by the stunning exhibitions, and an eager competitor at this floral extravaganza. This time around, my team and I will be feeding Britain’s finest seasonal produce to the greenfingered guests at my Jardin Blanc, a beautiful, peaceful sanctuary, set away from the hustle and bustle of the show. As an ode to my beloved Marseille, which I’m sure I’ll be visiting again soon, here is my easy recipe (serving four) for ratatouille. Lors de mon dernier séjour, j’ai dîné au Petit Nice, le restaurant de mon ami Gérald Passédat, tout près du Vieux Port et franchement délicieux. Mais cette année, je vais sans doute rester à Londres, avec grand plaisir, pour le Chelsea Flower Show de la Royal Horticultural Society. Au fil des ans, j’ai été un visiteur curieux, fasciné par les magnifiques jardins, et un participant enthousiaste à cette célébration exubérante de l’art floral. Cette fois-ci, mon équipe et moi cuisinerons les meilleurs légumes saisonniers du pays pour les hôtes à la main verte dans mon établissement le Jardin Blanc, un havre de paix loin du brouhaha du salon. Ode à Marseille, voici ma recette facile de ratatouille (pour quatre). Un délice pour les végétariens, qui se marie aussi bien avec la viande et le poisson grillés. METHOD: 1. Cut the onion, pepper, courgettes and aubergine into 2cm pieces. 2. Heat the olive oil in a large saucepan over a medium heat and sweat the onions for 5–7 minutes. 3. Add all the remaining ingredients and stir to combine. 4. Bring to the boil, put the lid on and simmer over a medium heat for 20 minutes. 5. Taste and adjust the seasoning before serving.

RECETTE : 1. Découper l’oignon, le poivron, les courgettes et l’aubergine en dés de 2 cm. 2. Faire chauffer l’huile d’olive dans une grande poêle à feu moyen et laisser dorer les oignons pendant 5-7 minutes. 3. Ajouter les autres ingrédients et mélanger. 4. Porter à ébullition, mettre le couvercle et laisser mijoter à feu moyen pendant 20 minutes. 5. Goûter et assaisonner si nécessaire avant de servir.

Florian Zeller is possibly the busiest man in Theatreland, with a trio of his plays hitting London over the past few months to lashings of critical praise (they include the wickedly dark dementia comedy The Father – which has just made the big leap direct to Broadway, The Mother and The Truth). This makes pinning him down for an interview such an absurd rigmarole that at moments I feel like a latterday Alice, in pursuit of a White Rabbit – who may or may not be a figment of her addled imagination. I confess that by the time we finally meet, in a smart Parisian hotel, I’m itching to yank this bunny by its fuzzy little ears. I’m instantly disarmed though, for like his best works, the dapper 36-year-old proves an engaging mix of intensity - especially when he’s describing his brilliantly bonkers writing process, which sounds a bit like a bad ayahuasca trip - mischief and a hint of mystery. He’s too sharp to speculate as to why he’s proven such a hot import, putting it all down to ‘accidents’ (though his Pinter-esque style, deceptively banal use of language, and the support of translator/playwright Christopher Hampton, also instrumental in the international

success of Frenchwoman Yasmina Reza, probably didn’t hurt). Yet he clearly gets a paternal kick from seeing how his plays evolve as they travel abroad. ‘Each country is hidden behind each production,’ he observes, sipping a cup of green tea. ‘In the UK, for example, the production for The Father was unassuming, very contained, with a lot of relationships being played out below the surface; in the US, by contrast, it’s incarnated in a far more direct and savage way. In France it felt more Latin, extroverted.’ Zeller - who’s married to French actress Marine Delterme - has five novels and 10 plays under his belt, and at times his life seems like it could be lifted from one of their pages. His mother is a fortune teller, and at 15 he had a defining experience he’s understandably less than enthused to talk to me about: ‘I was declared clinically dead, and when I awoke I was an entirely different person. Suddenly my way of seeing things inevitably changed and I started to write in a really intensive way, to try and put some order into my perception of the world’s chaos. And then it all turned into a dream, because coming from my social background I didn’t realise that you could make a living by being a writer.’

In his very early 20s he became something of a media darling, thanks to a string of books and his cherubic good looks. What was that like? ‘Bruising,’ he replies bluntly. ‘What I appreciate about the theatre world is being in a place that isn’t in the spotlight, because that spotlight is for the actors. Being backstage is more in keeping with what I need. Who I am.’ An ironic statement considering how high his international profile has been of late. Indulging in some pop psych, I wonder if the theatre isn’t also a place where Zeller - whose childhood was somewhat blighted by illness – can allow himself to be a big kid, playing games with both his actors and audience, particularly with frothier farces like The Truth, an adultery fest where he gleefully creates mayhem by erecting a labyrinth of lies. But the clock is ticking, and the White Rabbit is late for an important date, so I have one final question. Is he a good liar? ‘Less and less with time…’ He pauses. ‘No, no, actually I’m generally not too bad at it. Take this interview for example,’ he beams, ‘I think I’ve done pretty well. Florian Zeller est sans doute le dramaturge le plus occupé du moment : trois de ses pièces, arrivées sur les planches de Londres ces derniers mois, suscitent des critiques dithyrambiques (parmi elles, la tragie-comédie noire Le Père – qui vient d’être montée à Broadway – La Mère et La vérité. Cela rend particulièrement difficile toute tentative d’interview et, par moment, j’ai l’impression d’être Alice à la poursuite du Lapin Blanc. Lorsque nous nous retrouvons enfin dans un élégant hôtel parisien, j’ai une furieuse envie de secouer ce satané lapin par les oreilles. Pourtant je tombe tout de suite sous le charme du mélange de passion, de malice et de mystère que l’auteur de 36 ans insuffle aussi à ses meilleures œuvres – surtout quand il évoque sa méthode d’écriture un peu dingue qui rappelle un mauvais trip sous ayahuasca. Zeller est trop avisé pour spéculer sur les raisons de son succès à l’étranger et en attribue la raison à une série de hasards (même si son style pinteresque, son art du langage faussement banal et l’aide du traducteur/dramaturge Christopher Hampton, également à l’origine du succès de Yasmina Reza, ne comptent sans doute pas pour rien). Il éprouve aussi une fierté toute paternelle en suivant l’évolution de ses créations en dehors des frontières. « Chaque pays est présent dans chaque production, dit-il, en savourant une tasse de thé vert. « Au Royaume-Uni, par exemple, Le Père est joué avec modestie et simplicité – les relations étant tout en nuances. Aux États-Unis, en revanche, l’adaptation est bien plus directe et sauvage. En France, elle était plus latine et extravertie. » Zeller, qui a épousé l’actrice Marine Delterme, a cinq romans et dix pièces à son actif. Par moment, on dirait que sa vie devrait sortir de leurs pages. Sa mère est cartomancienne et, à 15 ans il a vécu une expérience déterminante dont il n’aime pas trop parler, pour des raisons évidentes.

« J’étais en état de mort clinique et, en me réveillant, j’étais une autre personne. Ma vision des choses avait changé du tout au tout et je me suis mis à écrire d’une manière vraiment intense afin de mettre un semblant d’ordre dans ce monde chaotique. Et puis, soudain, c’est devenu un rêve car, vu mon milieu social, jamais je n’aurais pensé pouvoir gagner ma vie en tant qu’écrivain.» Dès la vingtaine, il est devenu le chouchou des médias, grâce à ses livres et à ses traits de chérubin. Qu’en pense-t-il à présent ? « Ça m’a fragilisé. Ce que j’aime avec le théâtre, c’est que je suis en retrait : les projecteurs sont braqués sur les acteurs. Les coulisses cela correspond mieux à ce qui m’est nécessaire et à qui je suis. » Cela semble un brin ironique étant donné son récent profil international. En psychologue amateur, je me demande si le théâtre n’est pas un lieu où Zeller – dont l’enfance a été marquée par la maladie – peut jouer avec ses acteurs et son public, notamment dans ses œuvres plus légères comme La Vérité, où il crée joyeusement la confusion en bâtissant une toile de mensonges. Mais l’heure tourne et le Lapin Blanc est en retard pour un autre rendez-vous. J’ai une dernière question : est-il doué pour le mensonge ? « De moins en moins, dit-il. Puis après une pause : Non en fait, je ne suis pas trop mauvais à ça. Prenez notre entretien, dit-il avec malice. Je me suis plutôt bien débrouillé, non ? »

Out of the blue

Surrounded by builders and half-opened boxes, restless 69-year-old French diver and archaeologist Franck Goddio takes advantage of a break between press engagements to help manoeuvre a huge crate into place. The box, which arrived in London via Eurotunnel, contains a gargantuan Egyptian statue that lay beneath the Mediterranean for more than a thousand years in the lost cities of Canopus and Thonis-Heracleion at the mouth of the Nile. ‘This statue is one of my favourite artefacts,’ says Goddio. ‘It’s funny, I could touch them underwater, feel them. It’s like I gave birth to them.’ Now on dry land, the statue will form the stunning centrepiece of the British Museum’s new exhibition Sunken Cities, an undertaking on such a scale that the ceiling had to be dismantled to allow the safe installation of some of the larger relics, many seen for the first time outside Egypt. Trained in Paris, Goddio has pioneered underwater archaeology since the 80s, usually focusing on shipwrecks. His search for the legendary lost cities began in 1996. ‘We knew the cities existed from the ancient texts but none had been discovered,’ he says. ‘One historian suggested that they had not been found because they were in the water, and I took that hypotheses as the basis of my research.’ In cooperation with the Egyptian Supreme Council of Antiquities, Goddio began to search the sea east of Alexandria, exploring an area of 150sq km that he pinpointed as most likely to contain the lost cities. ‘We began to survey, going back and forward for months and months taking readings of the seabed. We discovered lots of shipwrecks and metal drums, hundreds. We decided to investigate the signals that did not correspond with anything visible – if when we dived we saw only sand, we knew something must be under it.’

The breakthrough came in 1999 when they discovered the foundations of a temple in Canopus. Three years later, they found Heracleion, which they determined must be the city of Thonis. Then began the slow process of recovery, with a team of 15 divers working in murky water, looking for items buried four metres under the sand. ‘I have been excavating in the Philippines since 1985 and we found 12 or 13 shipwrecks,’ says Goddio. ‘In the harbour of Thonis-Heracleion we have already found 69 shipwrecks. It’s a different magnitude – this is the biggest underwater project ever undertaken and it will take centuries to complete. ThonisHeracleion is a city of 3sq km and we are 7km from the shore. At the moment, we have found maybe five per cent of the artefacts.’ Although the cities were mentioned by ancient historians, nobody until now knew what caused them to disappear, or when. The reasons are hair-raising, even for the unflappable Goddio. ‘Those sites were totally submerged on the same day, most probably at the same hour, in the second part of the eighth century AD having been struck before by other natural disasters. This tells us that cities in the seashore of the Mediterranean can collapse into the sea at any second.’ The exhibition, and the story behind it, shows the complexity of underwater archaeology. So is Goddio a danger seeker, an aquatic Indiana Jones? ‘No! My role is to avoid adventure!’ he says. ‘I like being underwater because the preservation of the artefacts is different. It’s like a remake of Pompeii, not by fire, but water. They are sealed in a fraction of a second and then protected by the sea from elements and looters for centuries. You fi nd things you’d never see on land: a stone that may turn out to be the foot of a pharaoh, which nobody has seen for hundreds of years.’

Arrivée par l’Eurotunnel, celle-ci contient une statue égyptienne gigantesque qui est restée au fond de la Méditerranée pendant plus de mille ans, dans les villes perdues de Canope et Héracléion-Thonis, à l’embouchure du Nil. « Cette statue est parmi mes objets favoris, mais il y en a tellement, dit Goddio. C’est drôle, je les ai touchés et sentis sous l’eau. C’est comme si je leur avais donné naissance. » La statue sera le clou de l’exposition Sunken Cities au British Museum. Une entreprise telle qu’il a fallu démonter le plafond pour installer les plus grands artefacts dont certains quittaient l’Égypte pour la première fois. Formé à Paris, Franck Goddio est, depuis les années 1980, un des pionniers de l’archéologie sous-marine – spécialiste des épaves. C’est en 1996 que cet archéologue-plongeur de 69 ans a commencé à chercher les cités perdues. « Nous connaissions leur existence par les textes anciens mais elles n’avaient pas été découvertes. Un historien a émis l’idée qu’elles étaient sous l’eau et j’ai suivi cette voie pour mes recherches. » En coopération avec le Conseil suprême des antiquités égyptiennes, Goddio a commencé l’exploration des eaux à l’est d’Alexandrie, après avoir circonscrit une zone de 150 kilomètres carrés susceptible, selon lui, de receler les villes. « Nous avons effectué un quadrillage systématique des fonds marins pendant des mois. Nous avons trouvé beaucoup d’épaves et des centaines de barils métalliques. Puis, nous avons décidé de nous concentrer sur les signaux ne correspondant à rien de

Trois ans plus tard, ils trouvent Héracléion et établissent rapidement qu’il s’agit aussi de Thonis. Le lent processus de récupération peut alors commencer : 15 plongeurs fouillent les eaux troubles en quête d’objets enfouis sous quatre mètres de sable. « Je fais des fouilles aux Philippines depuis 1985 et nous avons exhumé une douzaine d’épaves, dit Goddio. Or, dans le port de Thonis-Héracléion, nous en avons déjà trouvé 69. C’est d’une tout autre envergure. Il s’agit du plus grand projet sous-marin jamais entrepris et son achèvement prendra des siècles. Thonis-Héracléion est une ville de trois kilomètres carrés, à 7 kilomètres du rivage. Pour l’instant, nous avons trouvé peut-être 5 % des artefacts. »

Les historiens de l’Antiquité parlaient de ces villes mais personne ne savait pourquoi ni quand elles avaient disparu. Même l’imperturbable Franck Goddio frémit en évoquant leur destin. « Ces sites ont été entièrement submergés le même jour, très certainement à la même heure, durant la seconde moitié du VIIIe siècle, après avoir connu d’autres catastrophes naturelles. Cela nous montre que les villes du littoral méditerranéen peuvent s’effondrer dans la mer à tout moment. » L’exposition et ses trésors nous montrent la complexité de l’archéologie sous-marine. Franck Goddio est-il accro au danger, tel un Indiana Jones des mers ? « Non ! Mon rôle est d’éviter l’aventure ! J’aime être sous l’eau parce que les objets sont préservés différemment. C’est comme un remake de Pompéi, avec de l’eau à la place du feu. Les artefacts sont figés dans l’instant et la mer les protège des éléments et des pillards pendant des siècles. On voit des choses qu’on ne verrait jamais sur terre, comme une pierre qui se révèle être le pied d’un pharaon, et que personne n’avait vue depuis des siècles. »

TURNING THE TIDE Clean-up efforts are finally paying off on the Thames and the river's former wildlife inhabitants, who once abandoned its waters, are gradually making a comeback t may surprise you to learn that right at the heart of Europe’s largest city lies a great wilderness. To the millions of Londoners and tourists who pass by the Thames each day, the river might be seen more as a murky waterway whose importance to Britain’s capital is more economic than ecological. This may have been the case in the not-too-distant past, when centuries of pollution had effectively rendered London’s river ecologically dead. However, through improved environmental policy coupled with focused efforts to clean up the Thames by a number of local organisations, the situation is vastly different today. The Thames now ranks among the cleanest metropolitan waterways in the world, providing an important habitat for wildlife and seeing the gradual return of species that for many years appeared to have abandoned the capital permanently. One of the key organisations that has focused its efforts to conserve wildlife in

the Thames is the Zoological Society of London (ZSL). Perhaps more famous for running two world-class zoos – ZSL London Zoo and ZSL Whipsnade Zoo – ZSL is in fact an international wildlife charity that operates field conservation programmes on the ground in over 50 countries worldwide, as well as the prestigious Institute of

Zoology (IoZ), a world-renowned centre for the conservation sciences. While its work is very much global, ZSL is also committed to protecting vulnerable wildlife and fragile ecosystems right on its doorstep. The charity has over a decade’s experience working with Thames wildlife, from highprofile mammal inhabitants like harbour seals to less charismatic but no less important species such as the elusive smelt, a type of small fish whose return to the river is a good indicator of improving water quality. ZSL’s conservationists are also closely involved with efforts to protect another iconic London species, the European eel. The Thames represents a vital habitat for these mysterious fish, more historically associated with the Cockney culinary scene. Londoners have a fantastic opportunity to actively help conserve the fascinating wildlife in the Thames through ZSL’s citizen scientist volunteering schemes. WHERE IT ALL FROM SKETCHES AND BLUEPRINTS TO 320KM/H As the first of our brand new trains takes its place in our fleet, we’re looking back on how the whole project began.

For the new Eurostar look, we worked with Pininfarina, the design house behind the distinctive look of Ferrari and Maserati. “Everything in the train answers to a functional demand,” says Fabio Filippini, Pininfarina’s Vice-President of Design, “but we try to answer it with the most elegant, simple and pure gesture.”

For example, we wanted to make sure that every traveller could enjoy a sense of personal space and comfort. The designers used colour to create a continuous flow through every coach, subtly alternating shades along each row of seats, so you’ll feel happily cocooned in your own personal space. And, while the world whizzes by, you’ll soon be able to connect to our onboard wi-fi through the Eurostar app,

giving you access to TV programmes, movies and more. Plug points at every seat mean that your phone can stay charged up and ready to go. “I’ve worked for Eurostar for 21 years now,” says Andrew Darbyshire, our Service Readiness Manager for the new fleet, “and it’s certainly the biggest part of its history since the launch. They’re the future of Eurostar: superb.” •

Alors que le premier de nos tout nouveaux trains prend place au sein de notre flotte, revenons sur la genèse du projet. Pour offrir un nouveau look à Eurostar, nous avons travaillé avec Pininfarina, la maison de design à l’origine du célèbre style de Ferrari et Maserati. « Dans le train, tout répond à une demande fonctionnelle » déclare Fabio Filippini, vice-président chargé du design chez Pininfarina. « Mais nous essayons d’y répondre de la façon la plus pure, la plus simple et la plus élégante. » Par exemple, nous tenions à ce que chaque voyageur puisse avoir son espace personnel et un sentiment de confort. Pour y parvenir, les designers ont créé une continuité dans toutes les voitures avec la couleur, alternant subtilement les nuances le long de chaque rangée de sièges. Ainsi, vous serez à votre place comme dans un cocon. Pendant que le paysage défile, vous pourrez bientôt vous connecter à notre wi-fi à bord via l’appli Eurostar pour accéder aux programmes TV, films etc. Les prises électriques à chaque place vous permettront de charger votre téléphone. Ook zijn er aan elke zitplaats stopcontacten om je smartphone of laptop op te laden. “Ik werk al 21 jaar voor Eurostar,” zegt Andrew Darbyshire, onze Service Readiness Manager voor de nieuwe treinen, “en dit is echt wel de grootste gebeurtenis voor Eurostar sinds de start. CHECKING IN FOR THALYS AND ICE TRAINS If you’re travelling to the Netherlands or Germany, mandatory security checks are now taking place for Thalys and ICE trains leaving Brussels-Midi/Zuid station. Your ticket, ID and luggage will be checked before you’re able to go to the platform. The Quick Connections exit on the Eurostar platform has also been closed – instead, you’ll need to take the main exit at the far end to go down to the main part of the station.

What to do When you get to the station, head straight to area near the Thalys information desk. You’ll find it on the right after the Eurostar check-in area and the SNCB ticket office. If you miss your connection, the SNCB ticket office team will be happy to help.

When you arrive from the UK, go upstairs to the main station concourse, where you’ll find the departure boards. Look at the departure boards for your train number and time. Remember, your destination may not always be the train’s final stop, so be sure to double check. If you’re travelling to the UK, head h ad upstairs and follow the signss for Eurostar Departures.
